For years, as federal dietary guidelines have promoted “High-carb, low fat” diets – championing carbohydrates and processed foods and, frankly, villainizing unprocessed animal fats and proteins and especially ‘red meat’, a small fraction of nutritional experts have protested that the policy is ignoring – and even contrary to – the science.  The nutritional guidance is finally, albeit slowly, coming back around to recognize that “high-fat, low carb” diets based on natural unprocessed foods like animal fats and proteins – and especially those with natural, pasture-based diets – are a more positive and healthy alternative.  There’s an abundance of good information and resources out there, and we recommend Adele Hite’s blog and as great places to start learning more.
